Title: I made my 1st pierogis today

I made pierogis today ..they look great..this is how I did it..I made the dough, then the filling and filled them and set them aside. Then I boiled them till they floated, and when that was done. I fried them in a lil oil and butter..Test taste now.  They are fabulous. Next time I am going to add my home made sauerkraut to some of them.  Thanks Gus.

They look good Pam. I haven't made homemade pierogi in years. I want to, especially after seeing yours!

Pirogi - GusRobins LTBBQ forum
flour 5 cups
egg 2
salt 2 tsp
sour cream 16 oz
Filling
potatoes 5.00 each
butter 
small cottage cheese 8.00 oz
chopped onions 1
"Dough -combine flour, egg, salt & sour cream and mix thoroughly. Knead the dough-should be moist after kneading. Roll out small pieces of dough, as thin as you can. With small glass, cut out dough circles. Place on floured platter, ready to stuff.
Stuffing- boil potatoes, whip until fluffy. Brown chopped onions. Add butter, cottage cheese, cheddar cheese  and onions to the potatoes. With a small spoon, put stuffing in middle of the dough circles. Press dough firmly around edges.
Cooking-Put pirogi in pot of boiling water, a few at a time. Cook until pirogi rise to top. Remove with spoon with holes and put in a colander and rinse with cool water for a few seconds. Put on wax paper to dry.
Serving- either fry in butter or put in buttered casserole dish with some fried onions and butter between layers. Bake at 350* 20-30 minutes until golden brown. I halved the recipe.

This is GusRobins recipe and it's really good.  I ate 4 of them they were so good.  Pam     .☆´¯`•.¸¸. ི♥ྀ.

I had a mistake - if you want to add cheddar cheese to the filling, it is about 0.75 cups to the ingredients noted.

Also, when you fry them up, fry some chopped onions at the same time.--excellent

Pam - yes they are also great with sauerkraut. That was the other part of the family recipe but my family preferred the potatoes so haven't made the kraut in a while.

Gus..I added over half a cup of cheddar cheese..might add more next time, the frying onions sounds good too. I saw someone make them on Diners, Drive-Ins and Dives with sauerkraut..seeing as how I have fresh home made sauerkraut..I'm gonna do that too. I really love sauerkraut. Thanks again. Very good looking Pam, they would be great with sauerkraut !  Also very good fried with a little bacon grease.

I like to fry up some bacon but real crispy, then add the perogie to crisp up. Serve with sour cream, yum. Bet Ya can't stop at twenty ;D

Sounds wonderful..I'm thinking  bacon grease, onions and sauerkraut with sour cream.  All I know is that they were wonderful the way they are..now it's time to play with the recipe. My baby ate 3 of them last night..what a lil piggie. Pam   .☆´¯`•.¸¸. ི♥ྀ.
