Title: Soda Cracker Candy

Dec 14 2014

Last night my wife was on the PC and I ask her if she was about done; I wanted on for a while. She said she was chattin with our daughter in law and she was making some cracker candy. My wife asked her what it was and she said it is one of Don’s recipes he made. My wife didn’t remember me making it but I did a year or so ago. The DIL was making it to take to her family party today in Toledo.

The doorbell rang a little bit ago and I could tell it was the grandson, three quick rings! He had a dish of the candy for us, they were on their way to Toledo.

Here is a pic of the candy and the recipe. It is very easy to make and would make a good Christmas treat.

Recipe:

      Title: SODA CRACKER CANDY

      1 c  Butter
      1 c  Brown sugar, packed
      Soda crackers
      6 oz Semisweet chocolate chips

For all you Heath bar fans out here, you ought to love this one. It's
really easy & doesn't heat up your kitchen...and it's a hit with young and old alike.

Melt butter and sugar on the stove over medium heat until bubbly and then cook and stir for 5 minutes.

Line a 9 X 13 pan with soda crackers, one layer only please. Pour the sugar/butter mixture over the crackers. You'll need to use a knife to keep the crackers in line...they tend to float.

Sprinkle a small bag (6oz ?) of semi-sweet chocolate chips over the top of the mixture and spread with a spatula; sprinkle on any toppings.

Refrigerate for about 40 minutes until firm and then cut them into squares. Remove them from the pan if they are firm enough, otherwise, return to the fridge to let them set..they will get hard.

Be carefull when cooking candy since it will boil over easily if too hot.

A variation is to spread peanut butter on the crackers, then top with some Heath brickle before pouring candy over. I also like milk chocolate instead of semi-sweet.

Some other toppings are any chopped nuts or some crushed candy canes.
