I am beginning to feel like a loner in here; since I am one of the few in here that is not in HOT WATER, SV! ;D
This is a little different since I usually have beans in my chili. There are some who will argue that it’s not chili if it has beans in it. I am just the opposite, it’s not chili without the beans so just call it what you like!
I went to my butcher’s Thursday to buy some meat and got 2 pounds of ground chuck for my chili. This was my second time out since my back operation just a month ago and my first time driving. When my wife fixed some store bought crab cakes that neither one of us could eat; I decided it was time to get back into doing the cooking!
I browned up the beef in two batches; draining the first batch and leaving the grease in the second; a little fat makes it better. I added half the chopped onion to each batch when it was getting browned and let them get soft. I put the beef in a large pot and added the 3 TBS. chili powder, 1 tsp. cumin and some dried garlic flakes. I let that cook a few minutes then added most of a bottle of stout beer; I had to save a few sips for me! I let that simmer about 15 minutes.
I pureed the can of fire roasted tomatoes, can of Rotel tomatoes and stirred that into the pot. I added the can of tomato paste, a tsp. of 4S salt and about 1 TBS. of mustard powder. When that returned to a boil I turned it down to simmer and covered. I let it simmer an hour and a half. For the last half hour I added a TBS. of smoked paprika and a TBS. of brown sugar.
It hit the spot for cold weather food, even without the beans! I had some leftover rice so added some to the bottom of my bowl topped with the chili and a handful of shredded cheese. My wife did not have the rice. We both like buttered saltines with our chili.
I will probably freeze up most of the leftovers, some for Coney dogs and some for on top of spaghetti.

I like chili! With beans, without beans, it's all good! But I do like it on the hot and spicy side.

Glad you are able to get out and back cooking! That chili looks good to me and would be good with beans in it too. We cook chili without beans or chili with beans (we call it chile bean soup or Southern Chili) and sometimes when we have company over we cook it without beans and have beans on the side for those who want it. It don't matter what you call it as long as it is good. Yours looks really good.
Oh, I guess you and I are the only ones who are not cooking in the SV way now. I do cook SV eggs for tuna salad.

Looks great Don, even without the beans, and good choice for a beer. I love a good stout with a bowl of chili, especially with beans in it. ;)

C'mon, guys, give him credit for making some progress. Now all we have to do is get him to use real meat, real chiles, and get rid of the tomatoes and he'll be on his way.
OBTW, by dropping the beans it's no longer soup; it's pasta sauce (albeit with a sort of a Latino flair).

Don - Looks tasty. Beans are still the best accompaniment to (but not ingredient of) chili. I always serve them together, mostly because SWMBO (who is otherwise close to perfect) insists on having them in her chili and it allows her to have it her way without ruining a whole batch of red.

Fine lookin' bowl of chili, Don ;D Glad you're "Back in the saddle".
It is always interesting to see the responses to chili ingredients. Super-purists only make contest style chili and that means just meat, peppers and moisture. It can be good, but doesn't have a lot of depth. There are lots of good things that can wind up in a recipe!

Looks great Don!! I have not got into that Sous Vide either but it sure does look interesting.

Bean politics aside, that looks like one hearty & delicious meal! I'd have to have an extra stout for myself though, that'd be too hard to only get a few sips!
