Title: Soupe A L’Oignon

I started preparing for tonights meal several weeks ago.  I made my own beef stock from beef bones that were cut into smaller pieces to be able to cook the marrow out of them.  I roasted the bones with some vegetables and then simmered them in a big pot with some seasonings.  I ended up with about two and one-half quarts of good rich beef stock.  I used some of the stock when I made the pan sauce for my SV short ribs.  This left me with a good two quarts of beef stock for some homemade French Onion Soup.  The recipe I used was the same one my Father used when he made French Onion Soup:  Julia Child’s recipe from her book “Mastering The Art Of French Cooking”.

By making my own beef stock, I was a able to control the amount of salt in the soup.  Typically, restaurant-made French Onion Soup is very salty.  I can’t eat that, and don’t.  I promised my wife that I would make her Julia’s recipe just for her when she had recovered sufficiently to be able to enjoy the effort required to make this delicious soup.  We had Julia’s French Onion Soup tonight.  It was really good.  I added a touch of Cognac to mine.  My wife didn’t want any added just before serving.

Will I make this again?  Yes!!  But not for a while.  I have other soups to make.  Especially since the weather is staying on the cool side here.

Easily one of my favorite soups. I have eaten it all over the country. I have never made it though. Your's looks OUTSTANDING.

Yea Art, onion soup made right!!! Looks delicious!!! That is my Wife's favorite soup but try not to take her any where after eating, she will embarrass you!  :D Don

I just loved Julia...and the movie Julie/Julia..I have some of her cookbooks and nothing is terrible. Great job on the soup Don. Time to make soup with our 4" of snow last night.  Pam  .☆´¯`•.¸¸. ི♥ྀ.

One of my favorite things  ;D

Back in my road warrior days when I'd often arrive late in the evening at a new hotel in a new city, I developed the habit of ordering Onion Soup from room service as my dinner treat.  It is on the Room Service menu all over the world and while I had a few that disappointed, most were fabulous.  Hotel chefs tend to be quite proud of their onion soup capabilities and, once made, it keeps well for later service.

Art that looks fantastic. Onion soup is my wife's and daughter's favorite. I've made my own but never with homemade stock. That must kick it over the top!

For the white wine I used a really nice chardonnay from a local vineyard.  Give this recipe a try.  A little labor intensive (making the beef stock, that is), but so worth it.  Your wife (or husband) will move you up to rock star status after tasting this soup.

French Onion soup is probably my all time favorite soup, and I have not made any in a while.  Art, after seeing yours, I think I need to make some!
