Title: NOLA style BBQ Shrimp

Most people when you say BBQ shrimp thinks of shrimp done on the outdoor grill. If you are from Louisiana you probably think of shrimp cooked or baked in a lot of butter, bacon grease and seasonings. I found this recipe years ago from the Frugal Gourmet. I love it done this way and has been a year or more since I have done them this way.

When we have this all we need with it is a good salad and some crusty bread to mop up the good butter.
Our salad tonight was some organic spring mix and baby spinach with a few pickled beets added.

I did the bacon, butter and seasonings in my lodge steel skillet then poured over the shrimp and baked in the oven. I placed the dish on the table so we could dip the bread in the good sauce. We were hungry as two Cajuns cause we ate all those shrimp!

Smokin Don

Recipe:

Best New Orleans BBQ Shrimp

3 slices bacon, chopped
1 or 2 sticks butter
2 Tbs. Dijon or stone ground mustard
1 ½ tsp. chili powder, your choice on heat
¼ tsp. basil
¼ tsp. thyme
1 tsp. fresh ground pepper
½ tsp. oregano
2 cloves garlic, crushed and minced
2 Tbs. shrimp & crab boil seasoning, I use a Tbs. of Old Bay and a tsp. of Zatarains
½ tsp. hot sauce or to taste
1 ½ lbs. large shrimp, with shells

Preheat oven to 375 deg.
In a skillet fry the bacon until almost crisp; add butter and rest of ingredients except shrimp. Simmer for 5 minutes.

Place the shrimp in a baking dish, and pour sauce over the top. Stir to coat all the shrimp. Bake uncovered for 20 minutes and stir twice during baking. Serve at once. If you don't use shell on shrimp I would think 10 to 15 minutes would be plenty to bake them.

Serve with some good crusty bread for dipping in the sauce. Serve in bowls with some of the sauce and it’s a good idea to have wet towels too; they are messy to eat but fun and delicious.

Serves 4 average people or 2 Cajuns!

Note: When doing for the wife & me; I just use 1 stick of butter, if serving 4 you may want to use 2 sticks.

Love this stuff!  I used to have a recipe (lost it somewhere down the line) that used several pounds of butter, a whole jar of fresh ground black pepper, a whole bottle of Tabasco and a huge stalk of celery.  You'd peel and eat the shrimp with bits of the celery and some good fresh French bread.  It was tangy but not hot.

Our apartment is about 100 yards from Pascal Manales !
The ini vogue thing is to serve the shrimp over grits but I much prefer a loaf of french bread to dip in the sauce.
