Title: crab meat thingamajig
Post by: 1Bigg_ER on February 08, 2015, 04:42:25 PM
So I had some crab meat leftover from the other day. Every Sunday morning I try to whip up a special breakfast for the family. So here we go.
Drained my crab meat.

(http://i1175.photobucket.com/albums/r636/emtawali/20150208_065508_HDR_zpsbs4phbvm.jpg) (http://s1175.photobucket.com/user/emtawali/media/20150208_065508_HDR_zpsbs4phbvm.jpg.html)

Diced some leeks and red pepper

(http://i1175.photobucket.com/albums/r636/emtawali/20150208_065450_HDR_zpsnotxives.jpg) (http://s1175.photobucket.com/user/emtawali/media/20150208_065450_HDR_zpsnotxives.jpg.html)

Chopped up some bacon and rendered it until almost crispy.

(http://i1175.photobucket.com/albums/r636/emtawali/20150208_065457_HDR_zpslzlcvfca.jpg) (http://s1175.photobucket.com/user/emtawali/media/20150208_065457_HDR_zpslzlcvfca.jpg.html)

Dumped the leeks, peppers. Thought I'd add a little heat so I added a good pinch of chipotle powder and a pinch of salt

(http://i1175.photobucket.com/albums/r636/emtawali/20150208_070108_HDR_zpsvstregga.jpg) (http://s1175.photobucket.com/user/emtawali/media/20150208_070108_HDR_zpsvstregga.jpg.html)

Got my lobster stock ready. Added that with a good amount of heavy cream to the bacon mess.

(http://i1175.photobucket.com/albums/r636/emtawali/20150208_070259_HDR_zpssgzthyut.jpg) (http://s1175.photobucket.com/user/emtawali/media/20150208_070259_HDR_zpssgzthyut.jpg.html)

(http://i1175.photobucket.com/albums/r636/emtawali/20150208_070449_HDR_zpswjujbsvy.jpg) (http://s1175.photobucket.com/user/emtawali/media/20150208_070449_HDR_zpswjujbsvy.jpg.html)

Mix that mess up and bring it to a very slight simmer. Take it off the heat and let it cool slightly.

Got some croutons that I made from my sandwich bread.
Add some lemon zest, squeeze the juice in the skillet with the bacon mess.

(http://i1175.photobucket.com/albums/r636/emtawali/20150208_071935_HDR_zps0saopozk.jpg) (http://s1175.photobucket.com/user/emtawali/media/20150208_071935_HDR_zps0saopozk.jpg.html)

Here I mixed the bacon and croutons, added one beaten egg. I wanted that mess to be well hydrated and not soggy. Chopped up some tarragon.
Added the drained crab meat and mixed Well. Season with extra salt.

(http://i1175.photobucket.com/albums/r636/emtawali/20150208_073011_HDR_zpsj75n8yar.jpg) (http://s1175.photobucket.com/user/emtawali/media/20150208_073011_HDR_zpsj75n8yar.jpg.html)

Pulled out my mini cast iron skillets and divided the mess up.

(http://i1175.photobucket.com/albums/r636/emtawali/20150208_073355_HDR_zpsdcuthdqh.jpg) (http://s1175.photobucket.com/user/emtawali/media/20150208_073355_HDR_zpsdcuthdqh.jpg.html)

Bake in 400 degrees oven until nicely browned.
Topped with soft boiled eggs and hollandaise sauce.

Ate these right out of the mini skilletso.

It's alright to be a gourmet cook. It's bad to be a one trick pony though.

Well I got several outdoor cooking devices but indoors I do Thai, Chinese, Mexican, and since I am Italian, I do a lot of that. A bit of Portuguese. But.. That crab thing was just inspiring.

That looks outstanding!!

I am not sure I could ever make it though, at this house there is no such thing as left over crab.  8)
