Title: Bourbon Bacon Marmalade

My wife and I ate at a new restaurant in town the other evening.  They had something on the menu that deserves mentioning.  It is called Bourbon Bacon Marmalade.  Both my wife and I loved the flavor.  I found a recipe online and decided that I needed to make some for home use.  Here is the web site.

With two pounds of bacon and two onions, plus all the other ingredients, I ended up with about 2.5 pints of marmalade.   Not a lot, but really good!!

Here is the two pounds of chopped up bacon cooking and getting crisp.  I drained as much of the bacon fat off as possible and then used it to cook the chopped onions and garlic.  They were strained again before putting everyone into the pot to simmer.

All the cooked bacon, onions, and garlic are in the liquid to simmer.

We’re making progress.  The mixture is reducing nicely.  This is the part that is time consuming.  I kept checking on the pot while it was simmering.  The whole house smelled like bacon.

We finally have it to the right consistency.  Time to cool down.  After it cools, I will put it in the food processor for a quick pulse or two and then package for future use.

I put some in a storage container for later use, as well as several “sample containers” for sharing.

It was a somewhat lengthy process, but definitely worth it.  The intensity of the flavors will add to any dish.  Tee is
coming over tomorrow morning for breakfast and he is bringing some fresh bagels.  I have the schmear and the marmalade.  It should be a tasty breakfast.  I had some on a homemade burger tonight for dinner.  WOW!!!  I’ll post those pictures later.

O.K. Art! NOW what I definitely will not sleep tonite just thinking about the Makers Mark Marmalade.... ;D

That would be so good with PB!!  (Elvis, hold the bananas!)  You could also use it in a BLT instead of or in additikon to the bacon.  I am thinking of making it again, this time with some Super Pig.  It should add a little different flavor profile to it.  I did leave out the chipotle hot sauce since I didn't think this would really add to the flavor.  I thought it would detreact from the overall effect.

Just got back from spending the day with Art at a class..(NO it was NOT part of a probation or parole agreement..... :D)

And I tried some of the the Bourbon Bacon Marmalade........O...M...G...!!!!!!! IT IS UN-BELIEVABLE!

This stuff will become known as "food Viagra"....because it is food-gasmic!!!!!

Truly - Art did this stuff proud. Outstanding!!!!

Bourbon Bacon Marmalade on a Bagel

You’ve already seen the “making of the marmalade” and one use of it (on a burger), so here is another way to enjoy your marmalade.  On a bagel!

Got to put a little schmear (creamed cheese) on the bagel first, followed by a generous portion of the bourbon bacon marmalade.  I just discovered that I forgot to take the picture of the marmalade on the bagel.

The best way to show this off is with a picture of Tee eating his bagel covered with schmear and bourbon bacon marmalade!!  I think he likes it!!!

If you have any leftovers..add it to baked beans then smoke them..makes Killer beans.  I added jalapenos to mine. Pam ; *))
