I did not want to fry them. Just wanted to use the Rec Tec and cook everything today ( burgers, etc...)
So I gave them 30 minute of alone time with the Amazen Tube and some Hickory pellets before turning on the Rec Tec to 350F for approx 40 minutes.
Then - I made a finishing sauce. This is easy and works well on ABTs or any other savory, salty, fatty appetizers.
1- jar of black berry jelly - contents into a small stew pot.
2-3 Tbs of Apple cider vinegar ( to taste )
1- generous pinch of salt
1-2 tsp. of Jalapeño Powder ( to taste )
Heat this enough to get all ingredients combined. Allow it to cool - and put it in a squeeze bottle. Use it at your own discretion. ;D It is addictive.....

Stretch out the sought to wrap around the cheese - pinch it together good....

You had my mouth watering when we talked yesterday about what you are doing. They came out even better than your description. I like the SP touch. Really brings out the flavor on the bacon. I'll take a small plates-worth, and another Shiner Bock, please.

Thanks boys and girls! It was Smokeasaurus that got all of this started. :D He posted a link to a recipe - but it was fried and I just figured ...why not put it in a pellet grill and bake it?
And - now I am thinking about different ingredients... What about a date - stuffed with toasted almond slivers, wrapped with a piece of a cinnamon roll, then bacon or prosciutto as a dessert item?
Or minced dried apples with honey and cinnamon, and a touch of butter wrapped in dough, then bacon...for a sweet and savory mini dumplings - and drizzled with a rum laced icing?
The possibilities are nearly endless.....I hope you will try and post your ideas!

Don't forget the sauce. The sauce is the ticket...if you like to pair salty/fatty/savory with - sweet/tart/spicy. For me that contrast of flavors is hard to beat!

If you make these - don't under-estimate the blackberry-jalapeno sauce. Of course - if you don't have or don't like blackberry use a flavor you like. And - if you don't have jalapeño powder, use a little cayenne pepper, or even fresh ground black pepper. Taste as you add and blend tho. And the apple cider vinegar added tot his sauce adds a nice tart punch to the sweetness...Really balances it out.
