Title: How long to smoke trimmings?

I've got a bunch of trimmings from racks trimmed to St. Louis-style.

Usually I just grind them up and include them in sausages but I thought "Why not smoke them?" and have a treat for the chef.

I'm just wondering how long to smoke them at 225 degrees F.

Rib Tips are a great treat and can be done using several different methods.

The standard method is to just do them like you would do your ribs except for the flap pieces. The flaps will cook very fast and are great kinda fixed like pig candy.

My favorite way to do the Rib Tips is to cook them up like I would for my regular ribs and then treat them like burnt ends by cutting them up into smaller pieces and then add some additional rub and then some extra sweetener like  brown sugar, Agave syrup, honey, or other, and then pan them and place them back into the smoker for another hour or so. Plate them up and eat them with your fingers!
