Starting a 4 day process of making Sriracha hot sauce .
first cutting the chili i leave the seeds in ,blend them with a dash of water salt and brown sugar . put in a glass container ,it will go in to a dark cool place to ferment for 4 days .
now after 6 days of Fermentation i add 1/2 cup of vinegar and blend well .
strain back in to the blender with 1/2 tsp of xanthan gum .
