Title: Next step in the habanero pepper powder process
Post by: TMB on July 24, 2015, 09:57:33 PM
Tonight Kimmie and I cut and cleaned the habaneros to get them ready for Saturdays smoke, dehydrate and grind

Yes we had gloves on and were very careful on handling them.  ;)

Saturday I'll smoke these in the Bradley for 2 hrs then dry them out to grind  8) 8)

I'll have more pictures as I go. Sorry for the poor pictures but my I-Phone does not take the best pictures  :( :( :(

I bet they soak up the smoke good. I wonder what would happen if you dried a batch and ground it up and smoked the powder on coffee filters like we do the smoked salts?

Tommy - you may find that you need to smoke them and dehydrate them much longer than you expect. They hold a lot of moisture, and each pepper is a sealed unit....It will speed up the process if you split them open - or even slice them in half length wise.

Tee is right. It takes a while to dehydrate peppers. I halve mine when dehydrating them. Even then it still takes a while.

All done and bottled up!

Ran smoke from an A-Maze-N 5x8 pellet smoker for four hrs and a temp around 125 to 150. Hard to keep it at a good temp because it was hot out and Bradley's are not that great at temp control.  Started at 9:40 am and pulled at 5:50 pm

While I was smoking the habaneros I tossed in some pumpkin seeds and pistachios

After the peppers were dried I tossed them in a grinder (dedicated grinder) only thing I use it for ;) and ground to a very fine grind for rubs.

OH by the way if you look close you will see I had a fan running behind me when I was grinding the peppers, believe me found out the hard way this is a good thing to do

I will try yes.  Going to send some to Sparky and hope to make another batch.  If I get it done I will have some with me  ;)

Tommy, last time I dried and ground up habaneros, it worked out to roughly 1/2 tsp of powder = 1 pepper.
