The guacamole you buy at the store has a lot of fillers and preservatives and I've never found any that was as good as real, fresh, home-made stuff. Its a little bit of work, but not a lot.
Ingredients
3 ripe avacados (ripe ones are greenish black and soft)
1 small onion
1 small tomato
5 cloves garlic
1 lime
2 Tbsp. mayonnaise
Salt
Preparation:
Pit and mash the avacados in a medium mixing bowl (potato masher works well). Dice the onion, tomato and garlic to a very fine chop and stir into mashed avacados. Squeeze juice of the lime over the mixture (prevents oxidation and discoloration and adds a little “nip”. Salt lightly and taste until adjusted to your liking. Cover with saran and refrigerate – overnight is best. The mayo is optional but adds some smoothness.
Serving:
"dip" using good quality tortilla chips. Also mighty good on burgers or lots of kinds of sandwiches

I'm one of "those" that just can't do cilantro (or coriander.) Don't know why, just can't do it - try ordering a banh mi with no cilantro... ::) ??? I sub in parsley.

me too..had some stuff with cilantro and they must have put in an entire bunch..can NOT handle it after that..love my home grown parsley tho. .☆´¯`•.¸¸. ི♥ྀ.

I like cilantro, but never have any around because Mrs TF can't even be in the same room with it. Makes her wheeze something awful, she must be allergic to it or something. Could be worse I suppose, she could be allergic to bacon! I'm thinkin' that might be grounds for divorce!!!! ;)

Well, at least you don't have to worry about whether your leftovers (oops-reserved servings) are gonna go missing from the fridge!

Interesting thread to follow about the cilantro. I like it myself but I've never put it in my guacamole because to me it just doesn't fit there like it fits into some other recipes. I have another recipe for pico de gallo (fresh salsa) and a little cilantro in that is delicious. I understand why some don't like it, though -- it is very strong even in small amounts.
