Title: Bay Scallops

I was poking through the freezer trying to decide what we had to cook for dinner tonight.  I came across a package of bay scallops.  They had been in the freezer for quite a while.  My bet was that they were freezer burned.  Turned out I was wrong.  They had been double wrapped and were in good shape.  Now, what to do with them.  Stir fry?  Not an option.  I have done some stir fried skirt steak and veggies earlier in the week.  What about poaching them in clarified butter with minced garlic, sweet basil and Pinot Grigio and serve over some fettuccine.  Just before plating, I added a touch of salt.  Plated and added some shredded Parm.  Check out the plate.

Fairly simple and easy to prepare.  I will be doing this one again.

I love bay scallops... but they are very expensive.

A number of years ago I flew 5-gallon buckets of bay scallops from Nantucket to Cape Cod... they was always enough for a sample of raw, fresh scallops!

Never gave capers a thought.  I used some sweet California basil instead.  Ended up really tasty.

I've always gone with Sea Scallops before, but based on this dish, Art, I'm giving those a try!

Nice job Art, this was a staple in my house growing up.  Seafood changed to whatever we had but process was the same.  I'm hungry for this now!
