I figured it was time for me to take a turn at these bad boys. A couple of weeks ago, I picked a 4-pack of Beef Chuck Ribs at Restaurant Depot. Each rack had four bones and weighed about 4 lbs. I vac sealed each rack and froze them. Thursday I decided it was time to give them a go and pulled out two racks to thaw.
Saturday night I sprinkled them with some Rod Gray's Most Dangerous Stuff and put them to bed.

I started them on the Kahuna at a little after 11:00. It ran between 250º - 275º for the cook. I'm still working on dialing in the new kid, but you know what they say . . . "practice makes perfect."

At about 3 hours in, I started spritzing them with apple juice at roughly 45 minute intervals.

The original plan was for my daughter and SIL to come down for dinner at my place. But, due to some car issues, plans changed and I decided to head up to their place. So, as the Panthers (8-0 ! ! ! !) finished embarrassing the Packers, I am packing up.

So, I'll be finishing them up in the oven when I get up there. I'll let you know how they came out.

I love beef ribs. More than pork. Something to do with where I am from...? :D

My kind of BBQ!

Dang...I was following this one and it just hit the "stall".
How DID they turn out?

Looks mighty fine. I love the way beef ribs shrink up on the bone as they get done. Like built in handles.

Looking awfully good Bill! Those are some meaty bones!
I bet they tasted even better too! 8)

I have to apologize for the exposure on the pics below. I thought that I had my flash turned on. Plus I do not have any photo editing software on my computer.
When I finally pulled the off the smoker, they were sitting at about 195º. I know that it's more about feeling than temp. So, I popped them into a 300º oven at my daughter's house while the asparagus was roasting. I pulled them when the toothpick seemed to almost pull itself into the meat.
So . . . . . . the big (if a little dark) reveal ! ! ! !http://www.letstalkbbq.com/Themes/actualism_ltbbq/images/bbc/orderlist.gif

Having made the mistake of trying beef back ribs once, I don't understand why stores even stock that product. The only people who would buy them are those that don't know better.
Plus, at $3.64 lb. for these Dino Bones, it's really a reasonably priced dinner. Abut the same as St. Louis ribs, just a longer cook.
Can't wait for an excuse to thaw out the other two racks ! ! !
