Title: Dutch Loaf

Hi..I just put in a 5 lb loaf of homemade Dutch Loaf..she has 8 hours to go. Looking and smelling real good. I had to grind the pork..took about 5 minutes with the KitchenAid grinder.. then mixed with the rest of the ingredients. Put in a loaf pan and then in the CharBroil 30" electric vertical smoker..gotta add something else to the smoker..it's too empty. Can't have an empty smoker. She is sitting at 200º. looks great..BUT

have you cooked it this way before?
200°F seems low for cooking uncured ground meat and 8 hours seems like a long time...with the meat in the danger zone of 40°-140°F for quite a while.
reassure me you are gonna be OK and not get sick!   8)

Barry..it has the cure#1 to prevent that. It's made for smoking meats. I just happened to have some from former smoking and I'm still here. Now on to sausage making. I have everything except the venison that I want to do. But it's bow season here. I might luck out. I have some bow hunters that owe me. I love bartering. Pam .☆´¯`•.¸¸. ི♥ྀ.

My Dutchloaf is finished and waiting to sit in frig overnight...then slice. So for supper I made potato soup with rivels.. and for dessert..a punkin pie.  Can't wait to try my Dutch loaf.  Pam  .☆´¯`•.¸¸. ི♥ྀ.

Looks like you did a good job on that Dutch loaf. Nice Potato soup and Pie Too.

Ooooh yeah... Pam, you're making me want to go get my Dutch Loaf out and make a sammy! I can't wait to see yours sliced.

My mom didn't cook much, but she made the best potato soup...real thick..I like that and I like thick chili too..I make chicken and home made noodles real thick too..learned from my mother in law. They are the best.

That looks good.  Between you and Cliff making Dutch Loaf, I may have to try it when I get back home.  The wife and I are on a one week trip through Charleston, SC and Wilmington, NC and surrounding area.  I miss my own bed and my MAK!!

Art..sounds like a great trip..have a good time..you and your bride. I am going to slice the dutch loaf this morning as soon as I dig out the slicer. It's packed in the basement..real easy to get to..just in case..can't wait to see what it tastes like..there was a lil discrepency on the cooking temp tho. I smoked at 200º for 8 hours...with the cure #1 and that temp is sposed to be for hot smoking. I heard that he cold smoked at 140º..so we shall see. It's a learning thing. Where is Rick when I need him?  lol..Have a good trip. The MAK will be ready when you get back..your bed is waiting for you too..LOL.  Pammie  .☆´¯`•.¸¸. ི♥ྀ.

Cliff.. I am going to slice up my dutch loaf pretty soon.  Can I get a pic of the texture of yours? Seeing as how I can't taste it. Will post pic of mine. I wanna see the difference between cold and hot smoking the same thing. We may be on to something here.
Question..did you smoke the entire time? Nevermind, dumb question..if you cold smoked..duh. I did with pecan wood. Smelled so good too.  I did use 1 Jim Beam puck, because I had them.

I cooked it at hot smoke temps (about 170°) the whole time. No cold smoking.

OMG...This is the best stuff. I sliced the loaf this morning..got a few pics..but the taste is better than a deli. I sliced about 1/4" thick and started eating immediately. Good stuff. Will never buy that from the deli any more. I am amazed and I did it. Lemme show you some pics I took of the bottom , top and slicing. 
Cliff..mine is a lil different, texture wise, but that taste is great.  I see that yours is a finer texture, but I like mine too. I will work on that for the next time.. Again thanks for all your help.

Nice smoke flavor choice too; I bet the Pecan, with a touch of the Jim Beam, gave it a really good flavor!
