Title: Need a lightly breaded fried oyster recioe

I love,good, optimal word is "good" fried oysters.  I really don't care for heavy breaded oysters.  Oysters are not something I've cooked but just a few times and never get them quite like I want them to taste.  The last ones I did used an egg wash and panko crumbs....yuck, too much breading.  So, let's see how many good recipes can be posted here to give me some choices from whi h to choose.  Going to cook them tomorrow, Saturday, night.

Have you tried just broiling them. Or if in the shell cookie sheet and in the BBQ until they open

A light breading of salt & pepper and ap flour works well, amybe a lil cornmeal for a lil crunch..just shake them off before frying for a light coating.    .☆´¯`•.¸¸. ི♥ྀ.

You can make a thin egg wash using a couple of eggs(depends on how many you're frying)and milk, using a corn flour(fine not really course like fish fry)add a lil salt, black and cayenne peppers to the flour. Also if using a fish fry add some ap flour and mix well. Oysters are already wet(duhhh.......)so you can skip the egg wash but it does make some good fried oysters. Drain the egg wash from the oysters and place in corn flour and coat well. shake off excess and go directly into the hot oil(preferably a deep fryer)deep enough to totally immerse the oyster into the oil. If not the part not in oil will get soggy and not crisp as well. Oysters DON'T take long to cook at all. Let them get a light brown and remove and drain or place on several layers of paper towels. Eat while hot and crisp! Well, not so hot that you burn your mouth, you know.

Speaking of broiled oysters..... I'm overdue for doing some more like this using S.O.S. stainless steel shells that are made for this. Not everybody can get oysters by the sack or un-shucked but you can buy shucked oysters and use these shells. They are reusable. http://sosshells.com/
Oh, and when you broil oysters like this be sure to have some good bread for sopping up the awesome juices.

Cajunate recipe sounds good....we always just put a little salt and pepper in flour. Just dredge in flour and let them sit a minute before putting in 300 degree oil. Turn them a couple of times ...doesn't take long.

Mine is simple. Corn meal seasoned with a little cajun spice to your liking, take the oysters and without draining them, dredge them through the corn meal, set them on a wire cooling rack and let them dry out for about 10-15 mins, then fry up in 3700 oil till golden. It's not a thick breading and no wash of any kind to make the cornmeal thicker.

Nylic, give this a try. I also don't care for a whole lot of breading and this is probably my favorite way to cook oysters.

Heat up a small saute pan toss in a little olive oil and butter.  Toss in the oysters and season with just a bit of salt & Pepper.  Saute, and just before they're done sprinkle in a little bread crumbs & toss.

 Not a fried oyster recipe, but it is one of my favorites: Easy Baked Oysters
1 pint large oysters, drained
1/3 c melted butter
1 egg, beaten
1/4 c milk
1/4 t salt
1/8 t pepper
2/3 c seasoned bread crumbs
shredded monterey jack cheese
1 T chopped parsley
paprika
put melted butter in shallow oven proof baking dish large enough to hold oysters in a single layer
combine egg, milk, salt and pepper
dip each oyster in egg wash then roll in bread crumbs and place in baking dish, turning to coat with melted butter.
after all oysters are in baking dish, sprinkle with cheese, parsley and paprika. bake at 425F for about 10 minutes or until oysters are plump and lightly browned. Enjoy!
