Well that looks great! Might need to try 96 hours.

What was the weight of the chuck?

I think close to 3 pounds IIRC.

Thanks! After taking it from the bath I put it on an oiled cookie sheet and under a 500° degree broiler (aka my oven, lol) for a few minutes per side.

The meat itself was seasoned with Kosher salt, coarse black pepper and granulated garlic before going into the bag. I also added a little EVOO to the bag. Once out, I sprinkled a little more salt on one side before going under the broiler. Turned out very nice.

I season mine exactly like yours..I'm a minimalist when it comes to seasoning, my hubby is 80 years old and can't take it any more., looks perfect to me..gotta get the Anova out again, it's been a while.    .☆´¯`•.¸¸. ི♥ྀ.
