Title: Easy boiled peanuts (photos by dee)
Post by: Ka Honu on May 16, 2016, 11:20:13 PM
I seem to recall LA did a thread on boiled peanuts a couple of years ago but noted that his recipe was for industrial sized quantities of jumbo peanuts. Many of us don't have access to those babies so I thought I'd fill the gap with a "home quantity" recipe or two. Those of you who never developed a taste for boiled peanuts are excused from reading farther (or further if you prefer).

Boiled peanuts are as popular in Hawaii as they are in the south but ours are seasoned differently. I make them local (Hawaiian/Chinese) style about 1/4 of the time and Cajun style the rest.

I can only get raw (dried) peanuts so if you have green peanuts available you'll have to adjust your cooking time.

I rinse the nuts and put a pound in a crockpot with 10 cups of water and 2 tablespoons of salt (I use sea salt because I have a 50-pond bag in the garage) plus the seasoning below. In my crockpot that covers the nuts with about 2 inches of water. A lot of folks use lots more salt but I don't like them quite that salty. If you want to cook more than a pound at a time, just make sure you keep the salt to water ratio the same - I occasionally do 2 pounds in 15 cups of water and 3 tablespoons of salt.

Five and a half hours in the crockpot on HIGH do the trick. Raw peanuts float when you start and sink when they're done. Let them sit in the water for a while after they're done to soak up the juice and cool a bit (sorta like crawfish). You can refrigerate them in the liquid for a few days and drain when serving. If you make more than you need, they freeze well (drained and vac-packed).

For Hawaiian/Chinese style I add:
     - 3 dried star anise,
     - 2-3 sliced sliced fresh ginger "coins" (about an inch of ginger total),
     - 3 cloves slightly smashed garlic, and
     - 2 cinnamon sticks

For Cajun style I use:
     - 1 tablespoon Cajun spice (I make my own salt-free but be sure to take the salt content into account if you're using a commercial product),
     - 1 tablespoon liquid shrimp & crab boil (Zatarain's), and
     - 2-3 peppers off the bush outside (Hawaiian chili peppers - use what you got)

If anyone has any other recipes, please chime in.

Hmmm...Turtle - the Chinese/Hawaiian style sounds very interesting. The Mrs. T got me hooked on boiled slugs...peanuts years ago - and I love 'em Cajun - and Texas style ( slat - and lots o' Jalapeño and garlic...) but this recipe yo posted - I will give  whirl.

After all ..everyone wants "whirled (goober) peas"...... ;D

Tip your waitress! I will be here all week!!! ::) ;) :D

Turtle, duly noted and bookmarked for future reference. I know people who know people that like the Cajun style. I want to try the Hawaiian/Chinese style.

And what camera is Dee using nowadays? His pictures are beyond compare.

That's me.
Driving from Savanna to Open Sands Beach, FL we go from one boiled peanuts stand to the next while traveling the back roads. Lower Alabama and in Florida the name changes from Boiled Peanuts to Balled Peanuts.  Goes with oil pronounce as all. :)

Anyway going to try this Hawaiian/Chinese recipe.

Okay... go gentle on a northwestern girl for having a stupid question....

Do you boil them inside the shell, or after they're out of the shell?   :-[

Needless to say, I've never come across boiled peanuts before!!

If I could get green peanuts I'd use them but you pretty much have to live near the source to find any. I'm guessing that's because refrigerating and shipping isn't economical. I have gotten them in Savannah (while visiting daughter and SIL) and they're definitely a better option.

Well there's good news and there's good news.

First, I finally found a shop in Chinatown that carries jumbo raw peanuts. Ta Daaa!

Second, I tried the (Instant Pot) pressure cooker on the Cajun style recipe today. SUCCESS!! I cooked them on the "Manual" setting (high pressure) for 50 minutes and let them sit for a couple hours to relieve the pressure naturally and allow the flavors to soak in. The flavor was noticeably more intense than the stovetop and slow cooker versions so you may wish to reduce your spices accordingly if your friends aren't "pepperheads." (or follow my plan - embrace the bold and let them sit in their highchairs and whine).

I remember those monsters too. About 10 of them would fill up muqebe's Instant Pot! :D :D :D Anyone got any pictures of them? No one will believe how big peanuts can get until they see those things....

A sample of the "jumbo" dried raw peanuts I found here are shown below (after boiling) on a one-inch grid. Might not be as big as Terry's, but whose are?
