This does not look good to me but after the holiday I got to try it.....One for the team ??? ??? ??? ???

Come on just one little dog with globs of mayo :D :D :D :D It is funny but I love mayo but not on dogs.

Was the above recipe the way you had it as a kid?

There variations based on each vendor or family recipe, of course...But my favorite is as follow:

1. Steam the corn on the cob

2. Allow it to cool enough that you can handle it and poke skewer into one end for a "handle"

3. shmear ( see what I did there "shmear"... ;) ) the corn with mayo. If the corn is too hot - the mayo will liquify too much, if the corn is too cool - it will just remain on the surface of the corn, so..."warm" corn in the Goldilocks Zone is perfect ( not too hot..not too cold...)  You can use lime flavored mayo here for a nice bright note in the flavor.

4. Dust or pack on Cotija to your liking ( pronounced co-TEE-ha...really... :) ) cheese - which is a Mexican treasure - similar to a mild parmesan that is made with fresh farmers cheese in Mexico (which you can substitute with fine parmesan if you cannot ind Cotija in your area, it is a little different in flavor - but the idea is close ) - then us on as much cayenne, or jalapeño - or chili powder - or even a combination of the above to your liking. If you can't take the heat of the pepper - try dusting on some smoked paprika
And - a squeeze or 2 of lime juice if you used regular mayo...or just like more lime flavor.

Making my mouth water, and bringing back memories as I write this.....good times.... ;)

We used to have a lady in my neighborhood who would come around selling Elote from a cart.

Where I live now that same lady would be arrested :P

We always had local vendors like that lady - and folks with the tamale carts..man that food was great. Always a shame when regulations designed for
"public safety" get in the way of good food and cultural heritage.....

As a man who grew up eating Italian Tuna Salad (Chicken of the Sea, chopped onion & celery, and olive oil) I am in 100% agreement.

It is a treat that you cannot get your head around until you try it. The mayo kind of "disappears" in the flavor profile - and in reality, it just acts as a glue for the other ingredients. Think of it in the same manner as how you use mustard or mayo on meat as a glue for the rub. That's all.

And then there was that night 30 years ago in Ensenada. Stumbled out of Papa's & Beer and there was a cart full of these things. I thought it was tasty at the time. Probably had too much sun that day and not using good judgement.

I don't know, Tee.  I tried for the first time, last week, at my favorite Mexican Restaurant (http://hottaco.com/) here in Charlotte.  I thought it was all sour cream.  I took one bite and almost gagged. 

I think Granmom Bastone was right to stay away from that stuff ! ! !

and for the record, Mayo has it's place on a hot dog...  If you aren't familiar with them, Google "Tucson Sonoran Hot Dog"

I love the stuff!  If you like Parmesan on popcorn, then you will love Mexican-style Corn.

The owner of the local Mexican restaurant introduced us to Elote some years ago, and ironically he is originally from Cotija, the town the cheese is named after.

I just use Queso Fresco, when we make it.
