Title: Pork Shoulder Injection/ Rub Recipes
Post by: Ericd3043 on May 23, 2016, 06:16:26 PM
As mentioned in my TBE post, here are the recipes I found online that got rave reviews over -

Chris Lilly's Championship Injections

3/4 cup apple juice
1/2 cup water
1/2 cup white sugar
1/4 cup table salt
2 Tablespoons Worcestershire Sauce

Combine all ingredients and stir until sugar and salt are dissolved.

** It made the meat a little on the salty side, I might cut back on the salt next time.  However, with the sweet sauce, it seemed to balance it ok.

Chris Lilly Championship Rub

 1/4 cup dark brown sugar
 1/2 cup white sugar
 1/2 cup paprika
 1/3 cup garlic salt
 1/3 cup kosher salt
 1 Tablespoon chili powder
 1 teaspoon oregano
 1 teaspoon cayenne pepper
 1 teaspoon ground cumin
 1 teaspoon black pepper

Combine and mix thoroughly.

That is what the original website stated!  Honestly, I had never heard of him until now.  I might recognize his face if he has been on a cooking competition though!
