Title: Sous Vide chicken wings

So I was reading about how to cook chicken wings(legs) in the bath at 170F for 4 to 8 hours then frying with great results for crispy wings. I decided to give it a try but grill instead of frying.

Started with the salted wings in a 170F bath for 4 hours...

The fat in the chicken fully rendered in the bag after the bath. They appeared like they had been packed in translucent jelly. After an ice bath and cooling they were thrown onto the searing hot cook-air grill...

A few minutes later...

And picked these up to try...

Added some sriracha to the Thai Chili sauce...

After mixing thoroughly I put them on a baking pan and into a broiler to finish the sauce...

These were so good! Now the SBR buffalo sauce is mediocre but the Thai chili sauce is amazing! The wings were very moist, juicy, and crispy! This is my go to way of making wings for now on.
