Title: Roasted Pepper Corn Blend

A while ago my GF and I fell in love with a product that our Sam's carried:

The problem is, Sam's does not consistently carry the product and we really, really like it.

The solution was to figure it out for ourselves.  So, here's my attempt.  It is, at least, a reasonable facsimile:

Big Dawg's Roasted Pepper Corn Blend

2-12 oz bags of frozen corn microwaved ¾ of the way.
1 can of black beans (drained and rinsed)
½ large roasted red bell pepper - diced
2-3 thick slices of onion - grilled, then diced
Salt, pepper, crushed red flakes, granulated garlic taste.

Mix everything in a skillet and bring up to temperature.

Fairly easy and pretty darn close to the original.

I'd eat that. Trader Joe's sells a roasted corn that is pretty good. You could sub regular corn for that.

Bill,
Your post is just what I am looking for since my sister and her husband will be visiting soon.  My BIL is primarily a vegetarian, but will eat seafood.  Your roasted pepper corn blend is just the ticket.  Everyone will like that dish.

I think you've got it nailed, Bill.  I'm going to try this with fresh corn, roasted on the grill first and with some roasted garlic instead of the granulated.

Hah -- I'll use the time-proven scientific "eyeball" method, matching my result to the picture you posted.  I'll roast six ears and if that's not enough or is too much I'll just eat the stuff anyway  ::)
