Title: A Very Beefy 4th

My Wife had been wanting some beef ribs for a while but not just regular beef ribs. She didn't want back ribs, she wanted uncut shorties (on the plate) like the BBQ joints cook. So.....off to Publix she went and asked the butcher if they had some. He had a bewildered look on his face she said, lol. He pretty much got it right, not the best I've ever seen them cut but it did the trick.

Now, you think that would be enough meat wouldn't you? Wrong! She had some steaks in the freezer she wanted to cook up so she fired up her keg (not nearly hot enough for a good sear) and cooked some sirloins and 2 filets. So, is that enough beef? For most, it's more than enough. Not her. Nuh Uh. I had some frozen brisket in the garage freezer that I had taken out a couple of days prior to thaw in the fridge. It was leftover flat from that Wagyu from Snake River Farms that I smoked. We had some of that too!

To break up the meatarama, she made some cheesy taters and some fresh corn on the cob. It was all very tasty. The neat thing about it was that each piece of meat was distinctly different in taste and texture and each one was excellent! Even that reheated brisket was money! Beef is very versatile.

Sorry it took so long to post this but I have just awakened from the meat coma ;)

Could use some gravy but that's my kinda meal; she's definitely a keeper.
