My initial impression is that if you start with a great piece of protein, this may work.  If you want to cook something like short ribs, chuckies, etc. that require a fairly long time swimming in the pool to break down the connective tissues, this may not work. 

I really don't need a $299 new toy in my arsenal.  I would need to move to the garage.  With the weather we are experiencing here in NC right now, I would prefer to sleep in the house, thank you very much.

So...It is not truly Sous Vide...they are spring boarding from the popularity of the name Sous Vide. Unless it forms vacuum seal, and can cook at low temps for multiple hours - and is infinitely controllable in that respect...then it is merely an advanced griddle with a nice GUI based app on a phone.

It's a precision grill that will cook and hold your food to/at a specific temp and then sear it if you like. As Art says, it won't do low & slow long enough to break down connective tissue, etc. Kenji's pre-production review at seriouseats.com here (http://www.seriouseats.com/2015/10/worlds-most-precise-griddle-replace-sous-vide.html). His bottom line:

     "The Cinder isn't the magic bullet that's going to replace your stovetop or your sous vide precision cooker—it's a tool, just like any other, with its own advantages and limitations. I see two types of people buying and loving this device: those with lots of space who want another gadget to play around with (and perhaps eliminate some of the smoke and spattered grease problems they've had in the past), or those with very little space who want a single device that can cook a huge variety of foods (and some of them extremely well!)."

I guess I'm not either of those people (at least not at their price point).

Well it is not on my bucket list or budget but I must say it looks like a player for some people.

Probably won't see it on the shelves at Wal-mart the next time I am there..............
