Title: Coconut Cake

Here is the single layer coconut cake recipe I found on Face Book.

Ingredients:

1 cup Coconut (I used sweetened and shredded)
1 cup Sugar
1 cup Self Raising Flour
1 egg
1 cup coconut milk (I used unsweetened - all I could find)

Directions:

Combine all the ingredients well and place into a 8 1/2" cake tin, bake at 350f for 30-35 minutes.

With my convection oven, the cake was done in 25 minutes.

Bet that would be good with MM Caramel pecans....EH

This is a great coconut cake. And - I am a coconut cake critic. I really, really liked this one a lot.
