Title: Long hot day

Chris (10.5) and I competed in our 4th BBQ competition of the Summer on Sunday and it was a hot one.  Great Jones County Fair in Monticello, IA  1st beef ribs, 2nd chicken, 3rd pork, and 3rd in pizza

WOO HOO!!

Tell us more about what the day in the life of a couple of BBQ competitors is like in getting ready to compete. Having primarily judged events, and competed once I can say it is a different way of life.

A huge congrats to you guys!   Can you please tell us more about the event?  Two of your entries: beef ribs & pizza, are different than I normally see for a typical BBQ comp.

Do you have any pics of the event itself you can share?

Getting ready for this contest is the most challenging of the year.  There were actually 8 categories so we had to take twice as much meat as usual and everything to go with it.  It's still scored and judged under the KCBS scoring system but not all certified judges so I'm sure our pork ribs and brisket were to tight for the local judges.  Didn't really have time to take any pictures I know others were so I'll check with Chris.

Hey since y'all have really done well with the last few comps why don't you post some pictures of plating or give some ideas on how to cook in a comp.

There are a few here that have been asking questions on comp and your insight would be a valuable resource for them.

Heck a few recipe ideas for the ones who aren't cooking in comp wouldn't be a bad thing either  ;) ;)

Hey Tommy.  We're seriously considering competing in a Competition in Calhoun, GA the weekend of Dec 3rd.  It's fairly close to where you and Kimmie came to our friends house a couple years back.  Maybe you could come over and cook with us.  I posted a couple pictures two comps ago.  Haven't been really taking any the last couple.  Maybe Chris can chime in with a few.  As for our recipes and methods, nice try ;D ;D

Not really, just seeing if they can "give" hints on how to.  NEVER would ask for a secret recipe or anything like that, just helpful info

you start your smoker and get it at the desired temp.  in the mean time you get your meat ready.  then you put some flavored wood in the smoker.  At this point you put your meat on your smoker.  then when you think its done to the judges liking you take it off and wait a while.  then you cut it up and put it in a white clam shell box.  Then you go to awards and get your trophies and checks ;D ;D ;D

Hey - nice win !

And -we would not expect anyone to to really give up up their "secrets"...But - Tommy makes a good point. We love to see you guys win. But we like it even more when you participate here with ideas about competing, some tips, tricks and so on as well. That makes your posts much more "two-way conversations" ;), because it leads to folks asking questions about the "how" of competitions.
LTBBQ is not specifically competition oriented - but, we are not anti competition either...In fact - recently there have been a few posts - inquiring of the membership for help, advice and guidance in trying to get started in competition. And, I think that some this is generated by them seeing you guys making some walks - and it brings the possibility that they can do this as well one step closer. So -your input is not only welcome- but would raise your value to folks newer to BBQ. ;)

Be the superhero. It is easy. And - you and Chris might look interesting in a cape and tights.... :D :D :D

First off, congratulations on a good competition!

As one of those asking recently, any general tips are helpful.  We learned a lot during our competition, but almost as much prior to the event by talking to others here.  Once we got there, we picked up a lot of tips from the competitors around us.  While they would not give out trade secrets (my red head actually asked the guy next to us what it was in the recipe - she loved the flavor!), they did talk strategy and general info.

Info on what to expect and look for is always good.  Research online can work but interaction / discussion with those that have history is better.


It is possible my team may go at it again in the spring - price is right and it is not too far away.  A little camping trip with some cooking as the main event might be fun - not sure how the wife would take it though !
