Thanks guys. It took a little longer than expected: getting the files (too big to email), learning the nuances of the software, getting the video edited & rendered (to my liking), making sure everything was done properly for copyright issues, etc. Then I couldn't locate the the YouTube channel Tim had already setup (we still don't know what happened to it), so we had to setup a new account... blah, blah... ::)
At any rate, it's done now! 8)

Thanks Tim, but actually, the HARDEST part was not so much the editing itself. Imaging the torture, while editing, of having to watch you tear into those ribs, REPEATEDLY... and NOT drool all over the keyboard! ;D

I am going to say we cooked at around 250F. What kind of temp swings are you experiencing? Ia m sure there are a lot of S&S owners here that can offer their experiences.

Problems with temp management are usually do to a leaky lid. Binder clips can help quite a bit:

Geez Justin....That is more than just high praise from a guy like you. I think YOU bring the nicest production quality to videos I have seen! I wish I could tell you that there was a lot of prep involved. There were no notes, no script. No real plan. It was just a couple of guys talking about a great product and sucking up ribs like a street sweeper..... :D The Cliff worked on removing the parts where I was picking my nose, swatting flies and chasing my tail while barking like a dog.... :D :D :D

tee, when I try for 225-250 it will take off and run to 350 or so. I end up closing/adjusting vents, removing some charcoal,then it gets too low so I reopen vents, etc. Food still turns out good tho.

My lid does leak quite a bit. I'll try binder clips and see if that solves the problem. Thanks.

Try accessing the forum WITHOUT Tapatalk Pappy..It will work more consistently ;) Not an issue with he forum software...A reoccurring issue with Tapatalk.

If the warpage in your lid or base is beyond what the binder clips could fix...I wonder what a thin high temp gasket of the right width might do? I do expect it would not be a permanent solution, in that you would likely have to be re-done fairly often.

If the lid is warped lay it on a flat surface like your garage floor. Look for spots that bow away from the ground. HUG the lid at those spots and place the lid back on the ground. Repeat until you've gotten it to flatten out as best you can against the ground.
If the binder clips and the hug technique don't work then go for the gasket. Or if you just want a gasket you can do it first! A combination of these three techniques will get 'r done though. :thumbup: ;)

( My wife has caught me hugging my grills before. She said I needed therapy. Something about how I "think with my stomach". I said - no, just another grill would be cheaper and more digestively therapeutic. ;) :D

Tried the Texas Hug on the lid. No luck. The large binder clips I bought don't like the kettle. They just fly off.
Tomorrow I'll try a new approach. Will gently caress that darn lid and try to sweet talk it. Problem is I lost my touch 20 or 30 years ago. :)

2. Round off all the corners - so as to make it "capsule shaped"
3.Paint it blue.
4.Threaten the lid ...and tell it it had better "straighten up" ;D ;)

OK you've got one of THOSE lids. The ones with edges so steep the clips won't stick. My most expensive kettle, a Crimson Red perfomer, is the same way unfortunately.
You may ultimately have to get a gasket, but let's try a simpler approach.
Place the lid on the kettle when the fire is warming up with all the lit and unlit coals in the SnS. ROTATE it a little back and forth until your leaks are as tame as they can be. Once fire passes 175 F close the bottom vent until it's just cracked a bit. From then on start cranking down on the top lid vent until you're stable at 225 F. Rotate the lid back and forth again (20 degrees or less should be fine you want to keep the vent over the indirect side) until the lid leaks are reduced as much as you can. Tighten the vent a little more and now walk away for 15 minutes.
I bet your leaks will disapper. If they don't, you might need the gasket.

I found that out with my Weber kettle (like rotating the lid a small amount at a time, like the hands on a clock.) and after twisting the lid a little at a time, I found a position which fit much better.

If you put your lid on the ground and it rocks back and forth, it's out of round. In the past, Weber was very quick to replace those free of charge.
They seem to have tightened up a bit in the last few years but it's still worth a phone call. Worst they can say is no. They've replaced two lids for me for this reason in the past though. Their idea, not mine.

Had me measure the bowl and lid. Bowl was perfect. Lid was 23 1/8" vertical and 22 15/16" horizontal. Way out of specs. Hopefully the new lid will fit perfectly.
