Low Carb Pulled Pork Kickin' Chili topped with shredded cheese and a dollop of sour cream. I happen to have plenty of leftover hickory smoked pulled pork vacuum sealed in the freezer so I'm always looking to figure out ways to use it beyond the traditional recipes. I was a little dubious at first but man-oh-man did it ever taste fantastic ...
INGREDIENTS:
- ~ 1 lb Hickory smoked pulled pork
- 1 red bell pepper, chopped
- 1 medium red onion, chopped
- 1 bunch of celery, diced
- 15 oz can stewed tomatoes
- (2) 15 oz cans tomato sauce
- 6 oz can of tomato paste
- 2 cups of water
SPICES:
- 3 TBSP chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1/2 tsp cayenne pepper
Mix all ingredients and simmer at medium to medium-low for about an hour until vegetables are al dente. If desired, serve with shredded cheese and sour cream.

Yummmm!!! We did something like this pretty recently too! I added a couple tablespoons of Apple Cider Vinegar as well (I made a huge dutch oven full of the chili), it really added a lot to it!

Sounds like a great idea. I might have to thaw some of my vacuum packed PP and give this a try. It looks like you are also half way to a good Brunswick stew also!
