Title: Corn Bread for Infrared cookers

Kimmie made this for TBE a few years back and I though with fall coming on it would be a good time to repost

2 1/2cups corn meal   3 tbsp flour    2 eggs   1 1/2 cups butter milk and 2 tbs oil.    Spray 8 in. cast pot with non stick spray. Fill pot and place in preheated  Big Easy, remember I do bread after the meal is cooked. This gives the meat time to rest.   

Cooked in an 8 in cast iron pot

Lid open for this one.  As for time it was 18 mins for this cook
