Here is the Unit.
The unit will be heated by 220v and will have 2 oven burners for heat. Only one if it gets hot enough but I don't think it will be enough.
I am putting a convection in the right bottom of the unit for even heat distribution
I have made a smoke generator(pictures to follow) I'm not at home. It is made out of a smaller sized enamel canner. I drilled it through and am using ready rod to keep the lid tight. I have also drilled through the top for 3/8 inch copper pipe. I have a t connection so one end can go through the smoker and the other end will have a small brass venturi with a aquarium tank pump to push air along to the smoker.
This unit is fully insulated with real good insulation (fibrous) Cutting the stainless will be a bit of a challenge
I will also be using a dual digital set of probes for meat and inside temp.
