Title: Frankensteined hamburgers

NO MEAT GLUE!!!  I went to Costco yesterday and saw some brisket flats for sale but I didn't buy one.  I was regretting it the remainder of the day.  Just so happens there's another Costco near the gym where my daughter has some "ninja" classes on Sunday morning.  So after class, we went to Costco and I bought a 5+lb brisket flat and a 5+lb chuck roast.  I cut them up, chilled them, and then ground them up in my Smokehouse Chef grinder attachment (which I keep stored in the freezer).  Weighed the ground meat mixture into 8 ounce balls (it made 20 of them), flattened them down with wax paper on both top & bottom, put them on a baking sheet, and put them out on my deck to freeze (it's about 17 degrees out).  After freezing for a few hours, I'm going to vacuum seal them (in groups of 4) until ready to cook.  Probably going to make some tomorrow so I'll leave a few unfrozen.  Sorry...forgot to take pictures of the flattened burgers.

Puuurdy!

Try grinding up some really lean smoky bacon and mix it in to some of your ground brisket.

Puuurdy!

Try grinding up some really lean smoky bacon and mix it in to some of your ground brisket.

Last summer I ground some apple wood smoked bacon in with my chuck and made some burgers.  It was very tasty so I may have to add that to the mix next time.

Yep...they were $2.99/lb.  I've cooked 3 briskets on my MAK and they've all turned out great.  However, nobody but me eats it in my house so I end up giving most of it away.  I don't think I'll be making a brisket any time soon.

I vacuum sealed the burgers using my VACMASTER VP112S.  The machine is a beast but it works awesome.  Way better than the 2 previous Food Savers I had.

Reason I asked is would you have been money ahead to buy the packer? The flats at my Costco are choice grade and a couple bucks more a pound then the packer. I'm thinking cut the flat off and grind it, then smoke the point.

Makes sense.  That way I would have been grinding up some Prime meat.  Oh well, I'm sure they'll taste good either way.
