I found a rib roast on sale at Krogers. Sprinkled with kosher salt, cracked black pepper, and garlic powder.

Put it on the New Braunfels offset smoker.

Burning charcoal and oak wood.

Maintained 200 degrees for about 3 hours.

Pulled at IT of 120 degrees, foiled, and toweled for 30 minutes while heating oven broiler to 550 degrees.

Put in oven at full blast for 6 minutes (3 per side) to crisp up skin. Forgot to take a picture.
Final temp was 130 degrees.

Here it is plated with garlic mashed potatoes and sweet, buttered corn on the cob.

It turned out perfectly cooked and very juicy and tender with a very nice smoke flavor.. I will do this again because it is so easy and almost foolproof. Even someone who is 2dum can do it.

Tim, all kidding aside, I will miss your Aggies. I wish that cooler heards would have prevailed. I also want to wish ya'll good luck in the SEC. Luckily, you will still be able to carry on this conversation with Dee, TwoPockets, TMB, and Lost Arrow next year. Just change Texas to Alabama or LSU.

Well - I don't like the move Don - at all. If the UT / A&M rivalry was 113 years(?) in the making, and steeped in the continuously entertwining histories of both schools. There were socially significant events that were far larger in impact than just the 2 schools....The Chicken Ranch - and the subsequent publice knowledge of that, eventually becoming a musical. ( I know - whooda thunk it...? )
And - the naming of Bevo - due to the bull being stolen by A&M students and branded with the score of the recent ( 1913?) meeting of the football teams ( one of the minority of games in which A&M won)
Then the outpouring of compassion and respect offered by UT after the collapsed timbers for the annual bonfire at A&M (which killed 13 BTW...think about the significance of that number to A&M )
Inseparable. Like two feuding sibling brothers. They may fight like cats and dogs - but don't get in between them. ;D
No Don - there will be NO replacement for that rivalry. To attempt such would serve only to cheapen the honor, the history, and true Texas spirit of both schools - and the Republic of Texas.

Well Tee, we have a few rivalries here in the SEC, probably the most important is the Alabama/Auburn game. When the SEC decided to expand there was a lot of talk about moving Auburn into the SEC East instead of the SEC West which meant Alabama and Auburn would not automatically play each other every year. While the SEC said that they would to whatever it took to continue the yearly rivalry, they eventually decided to put Missouri in the SEC East (???) and leave Auburn in the SEC West. Unfortunately for Texas A&M, they are going into the SEC West which is going to give them a rough row to hoe every year. The SEC is widely considered to be the toughest football conference in the US and the SEC West is the toughest division. Going into the final few weeks of the football season this year the SEC West had the top 3 ranked teams in the country.
I would have personally preferred that the SEC would have expanded by adding teams that were actually in the SOUTHEAST. What about Florida State, Clemson, Georgia Tech? We don't even have any team from North Carolina. That said, welcome to Texas A&M and Missouri. Hang on and bless your hearts.
