Title: Tri Tip

Today I cooked a tri tip on the ceramic cooker at 230F with some mesquite smoke. Flipped after an hour. After another hour the tri tip was foiled and the egg was heated up to 400F. Then the tri tip was unwrapped and seared from each side. It was served with sauteed lettuce and potatoes and a sauce, made from the trimmed off fat and meat from the tri tip.

Amazing you can get Tri-tips in Germany like that and people here(except in California) have a difficult time even finding them!

I was going to do a tri this weekend but couldn't find it in the freezer.  maybe next weeked. 

Yours is making me wish I would have found mine this weekend though.

Now if WC can get his hands on some Red Oak, he can do authentic Santa Maria style Tri-Tip all the way over in Germany!!
