Today I cooked some pork chops, that were seared first on GrillGrates. Then I put a mixture of minced onions, mustard, sour cream, and parsley on them and cooked them to an IT of 140°F.

WOW!!! I like that meal! As simple as the crust is, I tend to not even think about doing something like that. I will in the future.

Looks great WC! Love the topping on the chops.
What is that Russian dessert drink? A clear liqueur? Or just vodka ;)
-
how was the stuff on top? i thought the pork chops were perfect. :)

Wow, what a great plate. Did you have to cook that topping a little before, or sauté the onions? Or did it finish on the pork to your liking? Really wanna try this one.

The best vodka I ever had. Got it from a more than 80 years old russian client who's been recently in Moscow nd brought it from there.

It was the perfect match to the pork chops. Although it wasn't crispy, it was exactly that what I wanted to have. I had something like that years ago in a restaurant and always wanted to try that out. To get the topping crispy put it on the chops from the start and cook them at about 320-350°F.

I sauteed minced onions and blended them with 150 g sour cream and 2 tablespoons of mustard. Then I added some parsley and panko meal. Let that all cool down.
After searing the pork chops, put that mixture on top and go on cooking the chops until an IT of 140°F is reached.
