Today I cooked some cod filets on the pelletgrill at about 390°F. The fish was seasoned with salt, white pepper and some grated tonka bean. It was plated up with beetroot and rice. The tonka bean left a subtle but very well harmonizing aroma to the fish.

I wish we cold get Tonk bean here in the USA.....it is illegal - due to an out-dated concern about one of the chemicals in it. ( coumarin)

I'm hesitant to eat anything they make RAT POISON out of ???
Many of my relatives were "dirty rats" ::)

@ teesquare: you can substitute the tonka with a bit vanilla grinded with white pepper in a mortar.
@ Lost Arrow: It depends on the dose. For these 7 cod filets I used less than half a bean. I had tonka seasoned meals many times and couldn't ever detect any negative influence.
