On wednesday I was lucky to get me some hanging tender from one of my favorite butchers. Today it was seasoned with salt & pepper, then cooked on the kamado at about 430°F.

That looks like my favorite cut for making tacos al carbon. It is more tender and flavorful than flank steak IMO. Nice cook, WC!!

After asking Google, I guess it's more popular as "hanger steak (http://en.wikipedia.org/wiki/Hanger_steak)".
