Title: Butt or Shoulder

Reason I bring this up is the other day I smoked 2 shoulders instead of butts

I found I got less cook meat for the $$$$$ with a shoulder then I did with butts

What's your thoughts?

I like the butt better especially for pulled pork and like a 7 to 8 pound one. I use smaller shoulder roasts sometimes for pork dishes. Don

I never say "always" because there's an exception to almost everything, but I prefer butts because, in my experience, they come out more moist and tender.  Going one step more, I prefer bone-in butts because the meat around the bone is so delicious!

I don't like that big ole ball joint in a Picnics so its gotta be butts!!

Flavor wise, I could do either.  But with the picnic, there is more weight loss considering the skin and larger bones and more fat.  If the picnic is priced considerably less, I'll pick one up, but I'm usually buying butts.

 I just wanted to make sure it was not me just complaining about the difference in butts and shoulders

I'm not complaining.  Just recognizing there is a difference in yield.  The picnic also has a couple of different textures to it's meat.

Now that you have done this survey, I wonder how many of the responses have actually cooked both.

I'm confused. A "butt" is the butt end of a shoulder, with the other half being the picnic. So, when you say butt versus shoulder, do you mean picnic, or do you mean a whole shoulder (butt and picnic)?

I'm just looking for some clarification.

OK, that's what I figured. The butt is much more shoulder than is the picnic, so precision in terminology is important.

John - it is a regional thing. Even in BBQ - there will ALWAYS be terms that are regionalized. Tri TIp is another example. Here in the S.E. - you are as likely to get the top slice off of the sirloin sold to you as a "Tri-Tip". Not the same as a whole muscle Tri-Tip that you would be familiar with.
