It's a perfect storm!
It's cold today high 47F
Found good looking fresh ( farm raised) salmon on sale
I gave up red meat for Lent!
Two pieces in the brine 1/4 cup kosher salt, 1/4 cup brown sugar, 1 tsp "seafood rub"
Two pieces to grill tonite.
Using my CB-500 as smoke chamber & a 6 in sawdust maze with sugar maple as smoke generator.
The ones for grilling get 30 min smoke & then seared.
The cold smoked get 8 hrs, then vacuum sealed & frozen.

You've got some fine lookin' raw material there, LA  --  I'll be standing  by for some pictures of the results.

Salmon is my favorite fish by far.  For Valentines dinner, my wife fixed it for us and she knows how to cook it!  I've never grilled or smoked any but I want to watch and learn a few things.

Two salmon pieces, one marinated 1 hour teriyaki , one in oil & an herb fish rub.
In the cold smoke for 30 min then on hot charcoal for a sear.
A light touch of smoke!

Yep, that's a couple of notches up from the bland (indoor cooked) pork chop I had last night.  Gonna' have to head for the store . . .

Pulled the cold smoked salmon off this morning.
Firm texture , looks & smells great!
Since was fresh salmon & I didn't have time to freeze before cooking I'm going to vacuum seal & hard freeze for 3-4 days before eating .

Good stuff LA.  I head up to Lake Ontario once a year for Kings And Coho. Always looking for good Salmon recipes, yours look great.
