Title: Burger Animal Style

Allright, I've never been at In-N-Out Burger's and I just know it from "The Big Lebowski". But the other day a food blog writer friend of mine cooked this Burger Animal Style and published the recipe on his blog (http://oldmountainbbq.wordpress.com/2013/02/03/burger-animal-style/). In-N-Out defines the animal style as a "burger of your choice with hand-leafed lettuce, tomato, a mustard cooked beef patty". I liked that idea and tried it today.

After cooking in recent time always with my ceramic cookers, I used my chimney starter today again since a longer period, because I needed a bit more surface for grilling.

Instead of a griddle I used the backside of three GrillGrates. The patties were seasoned with salt and pepper and seared on that seasoned side first. Meanwhile the other side was seasoned with salt and pepper as well and spread with CYM. Then flipped them and seared the CYM side. Smells goooood! :)

After searing the GrillGrates were pulled over indirect heat. After I put cheddar on the patties, I spread sauce (8 TSP mayonnaise, 4 TSP ketchup, 2 TSP pickle relish, 1 TSP white wine vinegar, 1 TSP sugar), some lettuce, pickles, sliced tomatoes, on the buns. Then I put the patties and caramellized onions on the buns - and ready!

That looks fantastic!  I never thought of coating a hamburger in mustard to cook.  Mustard on butts seems to disappear.  Could you notice it on the burgers?  Was it a strong or subtle flavor?

Could you notice it on the burgers?  Was it a strong or subtle flavor?

It was a strong flavor, that harmonized perfectly with the meat. But you got to have not to much meat in the patties: these were 120 grams/4,2 ounces ground beef. Last week I tried them with 230 grams/8,1 ounces and the mustard was almost not noticable.

But I have to ask...Why the vinegar and sugar?

I followed the recipe. ;)

Ok WC you did a good job. Being a California boy I am very familiar with In-N-Out. Animal style is one of those secrets that are not listed on their menu but they will do. They also make animal style fries.

The difference I can see is they use two patties on the double-double burger that are much thinner than your one. So try grilling some thinner patties.

I believe they also grill the caramelized onions in mustard and it might not be the patty but I could be mistaken.

Layer your cheese in between and at the top/bottom of the patties.

I may need to get some In-N-Out for lunch today. If I do I will take some pictures of the animalized burger ;)

I guess it's not the onions that are grilled in mustard, because they say on their website (http://www.in-n-out.com/menu/not-so-secret-menu.aspx): "a mustard cooked beef patty"

Looks like the onions are between the two patties?

These animal style fries look like covered with the burger spread combined with melted cheese plus caramellized onions. Is that right? Is there mustard inside, too?

As far I understood the In-N-Out website you can get all burgers animal style, so my version is not the double cheese burger but might be an animalized cheeseburger... ;)

There is no discernible mustard flavor in the fries so I would say no.

And your version  looks good WC! I imagine your version in a double would be quite a hefty burger ;)

In-N-out at least can live up to the hype with a great, and fast product at a good price.

Chik-fil-A is just sooooooo overrated. Product is nothing special.

I know what you mean. It's sort of like White Castle or kristyl in the south. Taste like crap but its a tradition :) :)  I am in no way saying tri-tip is in the same category as fast food burgers. That is some fine meat!

I think the deal with all fast food is they are never better, but they have a taste you can only get there and for some reason, every so often you just get a craving for that unique taste.  I mean, would anyone ever say Taco Bell has the best Mexican food (or even Mexican food for that matter), but don't ya just want one once in awhile?

Five guys is good, but NO SHAKES???? What the heck? How do you not have shakes at a burger joint? 

Muebe, Habit is great too!  They have an "upscale" version called Hook Burger. It is awesome!!!

I thought you guys had a Habit? Bummer. Hopefully soon.  If you ever swing through Burbank hit up Hook. Well worth it. I get my turkey patty, lettuce wrapped hickory burger. It is fantastic.

Wow that's an amazing looking animal style burger. Now that we're on the subject of In N Out burger I'd like to pitch in and say what I absolutely love about them. The burgers aren't monsters like some other chains out there and everything is just so balanced out. You can taste a little bit of everything without something being overwhelming. I'm a strong believer of balance when it comes to food. Just my 2 cents.
