Those tamales look great Pam.  :P :P

Great minds must think alike cause I'm planning on doing a couple pulled pork butts later this week and will use some of the pork for among other things ... tamales ... Never done any of them in my life but SWMBO and my Son love them so I'm going to surprise them with some  :D

We have a Mexican Meat Market a mile down the road that also has take out food and they're going to supply me with some of their masa, red sauce, and corn husks.  Add my pulled pork and viola -  authentic red neck Mexican tamales ...Should be fun  ;D ;D

Smoke..the tamales were good to me..I think they needed more sauce in the blend. But that is a minor thing. The pulled pork was great, but I used a lil too much masa making them so cut back on the masa some..about 1 1/2 tbs at the most. I spread it with my wet fingers , added the meat then rolled them up and folded over the bottom and stacked them. Didn't even need to tie them up. I soaked the corn husks for hours and that made it real easy. Cooked for an hour..voila..tamales. I was going to fill them with the pulled pork and add a few pieces of collards for flavor. Wish I had now. I  know they would have been killer. Go for it and have a good time. Rolling didn't take me long at all..maybe 15  minutes and I made 20 of them. Once I got the hang of it. Good luck. Man!!! you guys are killin' me here!!!

The ones I miss the most are green pork tamales - puled pork with salsa verde all snuggled up in the masa! Yours look great Pammie.

Smoke - I make a mean sour cream chicken enchilada!

Tee..this was my first ever attempt at tamales. I will be making them again, but gonna need bolder flavors..I should have added the collards to the pulled pork..could have been killer tamales then. I only needed  more sauce. ★*˚°。°

Never had "soul tamales" ...but - hey - I would try that.

Try some with the salsa verde in them - it adds a nice touch, and add som cilantro and lime juice to "spike" the flavors up a notch.
Find some canned chipotles in adobo if you want to add some heat with a smokey twist too
