Title: Testing time!

Well, this is practice night again for the steak cook-off in May. We will be trying a new seasoning on a few of the steaks. We only have a  few more weeks to get ready for this one. And it is the BIG ONE!! ;)

What temp will you have you BBQ at before placing your stakes on?

I think he told me he cooks at 700-800F. He uses a flat top and grill grates.

I'll normally get the temp up around 800. Get it as HOT as possible and let er rip! ;)  That's works for me anyway.

That's right. It is a Yoder grill with GrillGreats. I try to get up around 800 before I put the steaks on. ( Don't forget to bring them to room temperature before you put them on)

I was thinking about getting a charcoal grate from a Weber 22 with some bolts and fender washers to raise the coal level for some serious searing.
I tried Sparky's method using the weber baskets as blockers on the outside using some lump down the middle. It was good, but I think the charcoal grate is a little too far away for that.
I was also thinking about something to put under the original charcoal pan, but did not find anything on hand. If I had some firebricks I would stand them on end and try it.

And...lump 'coal burns considerably hotter ( if you are using a consistent brand ) than briquettes....

but I'm betting around two big Weber chimney fulls

I did two chimney starters about 3/4 full.  I used to just fill one starter up but by the time the top of the starter was fully lit the bottom was starting to get spent.

I am still waiting for those grill grates to cool down Captain  ;D

I put about 1/4 of a bag of charcoal (Kingsford) in first. I use lighter fluid and to get it going. I try to get the cheap brand to squirt it down with. When the coals get burning to the point I think the starter fluid has burned away, I add about another 1/4 of the bag. This seems to work pretty good as far as a good "clean" fire that wont leave any lighter fluid taste on the steaks. When we do the competitions, I start out with about 1/2 a bag and step it up from that to get the high temps.

Jack there was one of those old Char-Broil grills on Craigslist here in Birmingham not long ago for $25, looked to be in very good condition in the photos. The only thing that kept me from buying it was that $25 would have wound up costing me the cost of a divorce lawyer + half of everything I owned.

BBQ is CHEAP !!

the meat costs more than the cookers

Well I have 4 charcoal grills (3 in storage), 3 gas stoves (2 in storage), half a dozen turkey burners (all in storage), half a dozen crab boil pots (most in storage) and several hundred pounds of cast iron cookware in storage. I am paying rent on a 10x25 storage building and my garage is full. Between the cooking gear and fishing gear and camping gear I don't use I am running out or room, but I may NEED it all one day. Watch your TV guide for upcoming episodes of Hoarders to see when I will be on.
