Title: Citrus pork

Found some country style ribs on sale so I thought it would be nice to make some citrus pork...

Sounds interesting -- give us a little info on the "bath" and the method.  Apparently, citrus isn't just for ceviche any longer  ;D

The marinade is pretty simple...

1/2 cup diced yellow onion (about one small onion)
1/2 cup orange juice
1/4 cup hot sauce (I use Frank's or Chistal's)
1/2 teaspoon ground chipotle (or to taste)
1 tablespoon oil
1 tablespoon lemon juice
1 tablespoon lime juice
1 teaspoon granulated ginger
2 teaspoons granulated garlic
1/2 teaspoon smoked kosher salt
1/2 teaspoon ground allspice
1/2 teaspoon smoked peppercorns, ground

Mix it all and throw in the ribs to marinate.

At least three hours or up to 24... depends how lazy you are to get them on the smoker <lol>.

Going on the Yoder this afternoon along with a spatchcocked chicken and some fresh sweet corn with Cajun spice & lime
