Had the chance to make Hub's EZ Pastrami over the weekend.

I love Hub's EZ Pastrami recipe.  I just love pastrami.  Get me near a deli, and that is what I order. 

Randy (FLBENTRIDER) brought some homemade pastrami that he made from scratch to the KOA get together.  Randy gave me some before I left.  For lunch yesterday, I steamed a nice pile up with some provolone cheese on it and piled it high on some Jewish rye bread.  Almost heaven.  If we weren't going out to a Memorial Day get together, I would have made a second sammie.  This just might be my lunch today.

Did I mention that I love pastrami?

I sure am happy that everyone like this one so much -- it was one of those sort of on purpose, sort of accidental things I did and it came out looking and tasting planned  ::)

It is a very forgiving recipe but don't skrimp on the soaking.  Commercial corned beef is super-salty and you want to get a lot of it out.

Also, I did it on my Memphis pellet cooker but the recipe will work quite well with any cooker that can maintain the temperature setting or something close.
