Melted tomato and onion pizza sauce 1
1 large onion chopped
An equal volume of Roma tomatoes diced, I used 7
About ¼ to 1/3 cup olive oil
1 Tbs. oregano
1 teaspoon Italian blend seasoning, I used Penzey’s, a mix of Turkish oregano, basil, marjoram, thyme and cracked rosemary
1 Tbs. sugar
1 teaspoon dried garlic flakes
Salt and pepper to taste
Add onions, tomatoes and olive oil to a sauce pan. Bring the mix to a simmer on med. heat then turn to low and cover with parchment paper pressed down into the pan covering the mix. You just want it to barely simmer for three hours. I don’t think you need to stir but I did twice. Add the seasonings and sugar; turn up the heat some and simmer another 45 minutes to an hour to cook down some. Taste for salt and add if needed. Puree the mixture in a blender or use an immersion blender. This is my first batch and tasted pretty good. I think I will try it as is and then decide if it needs some tomato paste added or not.
Note: This made about a pint.

No I don't use the parchment paper for the second cooking David. I have some garlic flat bread I am going to try it on soon. Don

Thanks - that sounds great. If I can get a night without softball, this will be on my next pizza! I am thinking a homemade ciabatta crust. Lots of little holes to soak up the sauce... :P :P :P

Rick you can use fresh! :D I just get lazy and I find Penzey's dried garlic flakes are about as good as fresh! Don

Update July 18 2013: Pizza flatbreads on Grill Grates
I had made some melted onion and tomato pizza sauce I wanted to try. I also just got my Grill Grates to try pizza on for the first cook. I used two savory garlic and herb flatbreads I thawed out. They were partially baked.
This afternoon I seasoned the Grill Grated sprayed with olive oil while cooking a ham to make ham salad.
My toppings were Italian sausage, red and green peppers, onions and mushrooms with shredded cheddar and mozzarella cheese.
I put the Grill Grates on my Traeger with the bottom, flat side up, and set to 350 deg. I let it heat up for a half hour. The flat breads were on for 15 minutes and looked done.
I liked the pizza sauce and the crust was a nice even brown color. My wife thought the sauce needed a more tomato taste. I may add some tomato paste to what is left and freeze for later.
I really need to make my own pizza crust and try just a pepperoni and cheese pizza to get a feel for how the sauce tastes. I also need to have my son and wife try it; they are my official tasters.
