Title: Clams & linquine with smoked garlic sauce
Post by: bbqchef on September 30, 2013, 08:42:57 AM
Littleneck clams, garden-fresh Roma tomatoes and parsley with a smoked garlic, CRP and olive oil sauce... over al dente whole wheat linguine

Ya, I know... the only thing that makes it BBQ is the smoked garlic but it was still good eats!

Looks great Mike!

And...it does not matter if it is BBQ or not. We all love good food - and this certainly qualifies! :D

We love shellfish and linguini - yours resembles one my wife makes except she uses Penn Cove mussels and red pepper flakes

Well done, and thanks for a reminder of another dish that I need to put on my "must make soon" list!  ;D

Littlenecks were great... briny and tender.

I love doing mussels also but the littlenecks were on sale!

How did you smoke the garlic---cold smoke with tube?

Now you are really killing me. The only place to get it fresh like that is along the shore where you live or in the "can".

The last time that I had that was in New London, CT at a little place on Bank ST called the Buckeley House. They use to serve twin baked stuffed 1 1/2 lobsters for $19.95. They were stuffed with crab and shimp, Italian bread crumbs, onions, and peppers. That was a long time ago in the 80's and 90's when I used to go to Groton.

Cold and hot smoked. Hit the trimmed heads with cold smoke and then finished them off at 350 degrees F. for about 10 minutes
