Title: How many grills does it take to cook a steak?

The other day Sparky used 2 grills for a cook and I didn’t want that to go unchallenged.  So yesterday I used 3 grills to cook one steak.
We saw a wicked good sale on NY sirloin and bought this 3.5 lb. hunk of goodness.  It was about 2 inches thick and my plan was to sous vide and finish on the grill.  Well, circumstances caused plan B which was to cook low and slow on the MAK and then finish over charcoal on the little Smokey Joe.  So I set the MAK up to cook at 220ish and when the IT was at about 125 I moved the steak to the Smokey Joe for a little sear work.  I needed a place to put the little guy since my deck is wood and my winter’s woodpile is beneath it.  It normally sits on an old metal printer stand but that’s been put away for the winter.  Well, maybe there’s room on the gasser for it.  Yup, lucked out.
My better half cleaned up the garden so we had what was left of the brussel sprouts and a couple hassleback potatoes.  We loved the smokey flavor from the oak pellets.

Out of curiosity, did you take a final temp reading? It still looked like it was around 125 or so.

If you could have did the thing Sous Vide then a hot sear on the charcoal that would ave been over the top!

I didn't but it was only on the coals for 5-6 minutes so I doubt that it gained much in temp.  There was also no rest period, not even 5 minutes because we were so hungry.

If you could have did the thing Sous Vide then a hot sear on the charcoal that would ave been over the top!

I've got its twin in the freezer for that event.  I wish there was a way to monitor IT in the sous vide.  That's a product I'd like to have the patent on.

Why would you need to monitor the temp? It will not go any higher than what the water temp is.

The key is leaving it in long enough to reach that temp.

There is such a wide span of between done and overdone with Sous Vide.

You can find various guidelines for temps and times for different cuts online. Many times you can find a link where someone has done a particular cut of meat you are using and their results.

My advice to you is if you have not had the chance to try making the 72 hour short ribs then you are missing out ;)

That is a perfect looking steak. Smoked and grilled to perfection........and I now see another benefit of having a gasser on the patio  ;) ;D

That is why I want to know the IT.  I dread the thought of cooking a piece of meat say, 36 hours if it's done in 10.  But you don't know.

Muebe, this is definitely on my list of cooks to do.  But it's a loooong list.  The pics of yours blew me away.

it's fun using a bunch of grills.  steak and fixins look fantastic.  nice cook partner.   8)

Most of my butts are two grill cooks.
I smoke till internal temp is 160-170 then pan & foil & finish on gas grill @ 250F

Beautiful meal - the steak looks perfect. I've gotta try those taters. I'll take Pappy's sprouts (you don't know how hard it was to resist the obvious comment...  ;) 8) )
