My youngest daughter is visiting from London where she's lived for the past 10 years or so.
One of her favorite meals when she was growing up was Eggs Benedict, another was lobster (which will be in another post).

First it was time to sauté some homemade Canadian-style bacon

Then start building the meal... a bit of hollandaise atop a buttermilk biscuit topped
with the bacon

Add the poached eggs and more hollandaise... Time to eat!

I love Eggs Benedict, and most of the variations. Every now and then I will take the time to put that together for a big breakfast.

don't think I have ever had eggs bene before. sure look good. one day I will have to give them a shot. You sure make them look good.

The trick is simmering water with some white vinegar... three minutes and they're done.
