Title: Reguest for Smoked Chicken

My daughter and SIL came to visit and wanted some smoked chicken.  So bought two fresh Foster Farms chickens, home and into the brine for 24 hr.  A good rinse and dry,season and into the fridge for 24 hr, then into the Bradley for the first smoke/cook at 220* with Hickory.

After two hrs it was out of the Bradley ( IT @ breast was 141* ) and into the SRG.  about 45 min later the IT was 164* in the breast, so it was out and under foil for a little rest.

It was then time to plate up and eat.  Fresh green beans, garlic mashed potatoes, salad and a good glass of Merlot.

Nice job on the yard bird! - I will bet it was juicy and tender form the looks of it.

Nice bird and good crisp on the skin......that will be the next way I am doing a smoked chcicken
