I recently made corned beef and had some in the freezer... Time to make corned beef hash eggs benedict...

Layered the hash on a plate, topped with the eggs and hollandaise

I have a Corned Beef in the CP now cooking for dinner. I know what will be this weekends breakfast. That looks outstanding.

Is the sauce hard to make?

Hollandaise can be kind of tricky if you make it from scratch.
At home I use a packaged mix so all you have to do is add water (or milk depending on the brand). It's not as good as scratch Hollandaise but it works.
With the packaged mix I usually add a spritz of lemon juice to brighten the flavor.
And you can always turn Hollandaise into Béarnaise (for meat) by adding tarragon.

LOVE HASH. And you consistently make the best looking poached eggs I have ever seen!

Pappy... the trick is put some white vinegar in the water and only simmer the water.
