some of the best chicken I have every made, mashed tators and cado w/ chopped tomatoes.

Wow! You knocked that one out of the park. Do you season the bird under the skin? I like to do that to get the flavor on the meat also. Mainly cause my wife and kids don't eat the skin :o

I would give the Sriracha a try but the wife don't like the heat. :o

I need to give the Sriracha a try on some chicken one of these days. My wife is not into heat either. I seem to recall that STC uses Sriracha to coat his turkey boulders before he smokes them. Tends to "tone down" the heat, I think. At any rate, I will give this a try.

not this time but the flavor soaked thru. I try not to eat the skin but it was so good. I just cut it up in little pieces.

I am trying this one. that is beautiful.
after cooking the red sauce does seem to loose a lot if not all the heat. but great flavor profile.

Yep...them Californey boys are out there :D - but it looks great!
